THIBODAUX 鈥� Celebrate Louisiana cuisine Monday, March 5, at the 15th annual Lafcadio Hearn Award and Distinguished Visiting Chef Series, presented by the John Folse Culinary Institute
at 杏吧传媒.The event will honor Chef ,聽who trained under internationally聽renowned Chef Paul Prudhomme聽and is now the co-owner of New聽Orleans鈥� Brigtsen鈥檚 Restaurant聽and Charlie鈥檚 Seafood with his wife, Marna.
The evening鈥檚 dinner will feature dishes created by distinguished visiting chef and聽Philadelphia native聽. Attendees will enjoy Shaya鈥檚 wild mushroom vellutata, with truffle bruschetta; 聽 聽beet and blood orange salad with fresh herbs, hazelnut vinaigrette and arugula; slow roasted pork coppa, whole grain polenta and artichokes 鈥渟tracotto;鈥� and banana zuppa inglese with peanut brittle.
An associate of 2011 Lafcadio Hearn honoree Chef John Besh, Shaya forged a partnership with Besh in 2008 to open Domenica, a family-oriented Italian restaurant in New Orleans鈥� historic聽Roosevelt Hotel.
The 杏吧传媒 award dinner will begin with a cocktail reception at 6 p.m., followed by the distinguished visiting chef鈥檚 presentation and dinner at 7 p.m., in the Cotillion Ballroom of the Bollinger Memorial Student Union at 杏吧传媒.
